Yesterday the girls and I made a delicious Apple Cake, using the apples we picked last weekend.
It is based on a Stephanie Alexander recipe however with a few adjustments.....so if you have lots of apples give it a try!
1 cup of flour (we use 1/2 cup spelt and 1/2 cup biodynamic unbleached white)
2 teaspoons baking powder
1/2 cup raw sugar
ground cinnamon (approx 1 tsp)
3-5 apples - we used a mix of Granny Smith (Australian cooking apples) and Jonathans
140g melted butter
fresh lemon zest
Beat egg and sugar until light and fluffy, gently stir in flour, then melted butter, then add chopped apple (not too small), cinnamon and some lemon zest. Pour into tin and bake at 180-200`C for 30 minutes or until golden brown. Once removed from oven, we sprayed with a little (spray) olive oil and then sprinkled with a little ground cinnamon and raw sugar for a special treat!
